Squid (tubes and tentacles, cleaned)600 g
Lard or Tallow6 tbsp
Fresh Lemon Juice2 tbsp
Fresh Parsley (finely chopped)0.25 cup
Sea Salt1 tsp
Black Pepper (freshly ground)0.5 tsp

Method

Pat the cleaned squid tubes and tentacles very dry with paper towels. This helps achieve a good sear.

Season the squid generously with sea salt and black pepper.

Heat 3 tablespoons of lard or tallow in a large cast-iron skillet over high heat until shimmering and almost smoking.

Add the squid to the hot skillet in a single layer, being careful not to overcrowd the pan. You may need to work in batches. Sear for 1-2 minutes per side, until opaque and slightly golden. Do not overcook, or the squid will become tough.

Remove the seared squid to a serving platter.

In a small bowl, whisk together the remaining 3 tablespoons of lard or tallow (melted, if solid), fresh lemon juice, and finely chopped parsley.
