A daring and luxurious carnivore 'dessert' that masterfully dances between unctuous richness and a vibrant, tangy finish. Velvety egg yolks are transformed into a warm sabayon, infused with the deeply flavorful essence of seared bone marrow, crowned with a cloud of cold, tangy whipped mascarpone.
Ingredients
- Beef bone marrow, cross-cut100 g
- Large egg yolks4 count
- Mascarpone cheese, full-fat100 g
- Heavy cream, cold50 ml
- Fine sea salt0.5 tsp
Method
- Preheat a cast-iron skillet over medium-high heat. Carefully place the bone marrow pieces, cut-side down, and sear for 3-4 minutes until deeply caramelized and some fat has rendered, achieving a pronounced Maillard crust. Flip and briefly sear the other side. Remove marrow, reserving the rendered fat. Carefully scoop the warm marrow out of the bones and set aside.
- Set up a double boiler: bring a small saucepan of water to a bare simmer. In a heatproof bowl that fits snugly over the saucepan, whisk the egg yolks with a generous pinch of sea salt until pale and slightly thickened. Gradually whisk in the warm rendered bone marrow fat (ensure it's not boiling hot) into the egg yolks.
- Place the bowl over the simmering water (do not let the bowl touch the water) and continue whisking vigorously for 5-7 minutes, until the sabayon is thick, airy, and ribbony. It should be warm to the touch. Remove from heat and gently fold in half of the reserved warm, seared bone marrow pieces.
- In a separate chilled bowl, whip the cold mascarpone with the heavy cream and a tiny pinch of sea salt until light, fluffy, and just holding soft peaks. This creates a brilliant, tangy counterpoint to the rich sabayon.
- Divide the warm bone marrow sabayon into two serving dishes. Top each with a generous dollop of the cold whipped mascarpone, and artfully arrange the remaining seared bone marrow pieces over the top. Serve immediately, allowing the contrasting temperatures and textures to delight the palate.
