Method

Pat the shell-on shrimp completely dry with paper towels. Toss them in a bowl with 1 teaspoon of the Cajun seasoning to lightly coat the shells.

In a large cast iron skillet over medium-low heat, melt the butter. Add the minced garlic and lemongrass, cooking gently for 3 minutes so they soften and perfume the fat without browning. Stir in the remaining Cajun seasoning, fish sauce, and lemon juice until the mixture forms a cohesive, glossy, red-hued butter sauce.
Sear and Plate

Turn the heat up to medium-high. Add the shrimp directly into the bubbling garlic butter. Cook for 2 to 3 minutes per side, stirring frequently, until the shells are pink and slightly charred and the shrimp is cooked through. Pour the entire skillet—shrimp, solids, and pool of butter—into a wide serving bowl. Scatter sliced green onions over the top and serve immediately with plenty of napkins.
