A raw wild-game masterwork pairing cold, metallic venison loin with warm, oak-smoked bone marrow foam and the resinous bite of burnt pine needles.
Ingredients
2 servings
venison
Venison loin (center cut, trimmed)250 g
espuma
Canoe-cut beef marrow bones4 pieces
Heavy whipping cream100 ml
Grass-fed beef gelatin2 g
ash
Fresh organic pine needles50 g
seasoning
Flaky sea salt5 g
Cold-pressed avocado oil15 ml
Method
1
Freeze the venison loin for 45 minutes to firm up, then slice paper-thin using a meat slicer or ultra-sharp knife, arranging the slices in a single layer between parchment paper.
2
Dehydrate the pine needles at 60C (140F) for 4 hours, then torch them in a dry cast-iron skillet until completely black and charred; grind to a microscopic powder using a spice grinder to create the pine ash.
3
Roast the marrow bones at 200C (400F) for 20 minutes until the marrow is rendered and deeply golden, then scoop out the warm marrow into a blender.
4
Warm the heavy cream with the bloomed gelatin, combine with the warm marrow in the blender, and process until completely emulsified and smooth.
5
Strain the marrow mixture through a fine-mesh chinois directly into an iSi Gourmet Whipper, charge with one N2O charger, and keep warm in a 50C (122F) water bath.
6
To assemble, brush the venison slices lightly with avocado oil, dust with the pine needle ash and flaky sea salt, then siphon the warm, airy bone marrow foam directly into the center of the plate for immediate serving.
