Method

Velouté
1
Roast the marrow bones at 200C for 15 minutes until caramelized. Extract the hot marrow and transfer it to a high-speed blender with the warm bone broth, double cream, and cold-pressed butter. Blend on high speed for 3 minutes to create a highly stable, aerated, silky emulsion. Season precisely with sea salt, strain through a fine chinois, and keep warm.
Tartare
2
Finely hand-dice the raw prime beef cheek. Toss gently with a touch of melted tallow to coat, finely snipped chives, and a pinch of sea salt. Mold the tartare into a small, tight ring in the center of two shallow heated wide-rimmed bowls.
Plate
3
Shave the salt-cured egg yolk finely over the tartare dome and garnish with delicate micro-herbs. Tableside, slowly pour the warm, velvet-like Smoked Bone Marrow Velouté around the cold tartare island, ensuring the contrasting temperatures remain distinct.
