Exquisitely thin slices of high-grade Wagyu beef, meticulously roasted to achieve a caramelized exterior and meltingly tender interior. These succulent bites are then tossed in a vibrant, piquant ghee infused with fresh ginger, pure wasabi, and the profound depth of black garlic. A sophisticated late-night indulgence, marrying classic Japanese aromatics with the unparalleled richness of premium beef.
Ingredients
- Wagyu beef, thinly sliced (e.g., for shabu-shabu or sukiyaki)200 g
- Cultured ghee45 g
- Fresh ginger, grated1 tbsp
- Pure wasabi paste (sugar-free, check label)1 tsp
- Black garlic, finely minced2 cloves
- Fresh lime, zest and juice0.5 fruit
- Zero-carb fish sauce0.5 tsp
- Fresh chives, finely chopped1 tbsp
- Flaky sea saltto taste
- Freshly cracked black pepperto taste
Method
- Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
- Arrange the thinly sliced Wagyu beef in a single layer on the prepared baking sheet, ensuring no pieces overlap. Lightly season with flaky sea salt and freshly cracked black pepper.
- Roast the beef for 6-8 minutes, or until the edges are beautifully crisp and caramelized, exhibiting a deep Maillard reaction, while the center remains exquisitely tender. Watch carefully to avoid overcooking due to its thinness.
- While the beef roasts, prepare the aromatic ghee: In a small saucepan, gently melt the cultured ghee over low heat. Stir in the grated fresh ginger, pure wasabi paste, and finely minced black garlic. Simmer for 2-3 minutes to allow the flavors to meld and infuse into the fat.
- Remove the saucepan from heat and stir in the lime zest, lime juice, and zero-carb fish sauce. Taste and adjust seasoning if necessary.
- Transfer the hot, roasted Wagyu beef bites to a warmed serving dish. Drizzle generously with the infused wasabi-ginger ghee, ensuring each piece is coated.
- Garnish with freshly chopped chives and serve immediately as an exceptional late-night indulgence.
