Method

Smash Patties

Divide the ground beef into two tight 100g balls. Heat a cast-iron skillet over high heat until smoking, then grease with beef tallow.

Place the beef balls in the hot skillet. Use a heavy spatula or press to smash them completely flat into thin discs. Season heavily with salt and black pepper. Sear for 2 minutes until the edges are crispy and dark brown, then flip and cook for 30 seconds more. Remove patties and set aside.
Cheese Skirt and Egg

Turn the heat down to medium. Scatter the shredded cheddar directly onto the hot skillet in a circle. Let it melt and spread out. Once the edges start to brown and crisp, place the two beef patties on top of the melting cheese. Slide a spatula under the cheese skirt to lift the patties and cheese out in one piece.

Crack the egg directly into the remaining fat in the skillet. Fry until the edges are crispy and the yolk is still runny.
Plate

Stack the double patties with their crispy cheese skirt onto a plate. Top with the fried egg, sugar-free dill pickles, and a squeeze of yellow mustard for that classic food truck tang.
