Juicy skewers made from ground beef and bacon, seasoned with smoky paprika, perfect for grabbing on the go. Served with a vibrant, zesty herb oil for a fresh kick.

Ingredients

4 servings
Beef Skewers
Ground beef (80/20)600 g
Bacon, finely chopped200 g
Sea salt1 tsp
Black pepper0.5 tsp
Smoked paprika2 tsp
Garlic powder1 tsp
Onion powder1 tsp
Beef tallow or olive oil15 ml
Wooden or metal skewers8 count
Green Sauce
Fresh parsley, chopped0.5 cup
Garlic cloves, minced2 cloves
Olive oil60 ml
Apple cider vinegar30 ml
Sea salt0.5 tsp
Black pepper0.25 tsp

Method

Beef Skewers
1
In a large bowl, combine the ground beef, finely chopped bacon, 1 tsp sea salt, 0.5 tsp black pepper, smoked paprika, garlic powder, and onion powder. Mix well by hand until just combined, being careful not to overmix.
2
Form and Skewer: Divide the mixture into 8 equal portions. Form each portion into an elongated shape around a skewer. If using wooden skewers, soak them in water for 30 minutes prior to cooking to prevent burning.
3
Cook the Skewers: Heat beef tallow or olive oil in a large skillet or on a griddle over medium-high heat. Place the skewers in the pan and cook for 3-4 minutes per side, turning frequently, until browned and cooked through. Alternatively, grill over medium-high heat until done.
Green Sauce
4
While the skewers cook, combine chopped parsley, minced garlic, 60 ml olive oil, apple cider vinegar, 0.5 tsp sea salt, and 0.25 tsp black pepper in a small bowl. Whisk until well combined. For a smoother sauce, you can briefly pulse in a food processor.
Plate
5
Serve the smoky beef skewers hot, with a generous drizzle of the fresh green sauce over them or alongside for dipping.
