Ingredients
- Large Eggs3 count
- Smoked Salmon (flaked or chopped)50 g
- Full-Fat Cream Cheese30 g
- Unsalted Butter1 tbsp
- Saltto taste
- Black Pepperto taste
Method
- Crack the eggs into a bowl and whisk lightly with a pinch of salt and pepper until just combined (do not over whisk for fluffier eggs).
- Melt butter in a non-stick skillet over medium-low heat.
- Pour the whisked eggs into the skillet. Let them set for a minute without stirring.
- As the edges begin to set, gently push the cooked egg from the edges towards the center with a spatula, allowing the uncooked egg to flow underneath. Continue this process, folding the eggs slowly.
- When the eggs are about 80% cooked (still slightly moist), add the chopped smoked salmon and cream cheese. Gently fold until the cream cheese is melted and distributed, and the eggs are cooked to your desired consistency (avoid overcooking).
- Season with additional salt and pepper if needed. Serve immediately.
