An intense, comforting side dish cooked down in a heavy skillet until the mushrooms drop their liquid and absorb deep pork fat, browned butter, and garlic.

Ingredients

4 servings
Skillet Base
Thick-cut bacon, diced150 g
Cremini mushrooms, quartered450 g
Grass-fed butter60 g
Garlic, minced4 cloves
Fresh thyme sprigs4 stem
Finish
Heavy cream60 ml
Aged parmesan cheese, grated30 g
Coarse sea salt0.5 tsp
Cracked black pepper0.5 tsp

Method

Skillet Base
1
Add the diced bacon to a cold cast iron skillet over medium heat. Fry slowly for 8 to 10 minutes until the fat renders out fully and the bacon becomes crispy. Remove the bacon with a slotted spoon and set aside, leaving the liquid bacon grease in the skillet.
2
Turn the heat up to medium-high and add the quartered mushrooms to the hot bacon grease. Cook undisturbed for 5 minutes to develop a deep brown crust on the bottom side. Stir once and cook for another 5 minutes until the mushrooms release their moisture and begin to shrink.
3
Reduce heat to medium. Add the butter, minced garlic, and thyme sprigs to the skillet. Cook for 3 to 4 minutes, spooning the foaming garlic butter over the mushrooms continuously as it browns.
Finish
4
Pour in the heavy cream and scrape up any golden browned bits stuck to the bottom of the pan. Simmer for 2 minutes until the liquid thickens into a glossy, rich coating.
5
Stir the crispy bacon back into the skillet. Turn off the heat, discard the thyme stems, and fold in the grated parmesan cheese, sea salt, and black pepper.
Plate
6
Serve hot directly from the cast iron skillet alongside grilled steak or roasted protein.
