Place the chicken thighs, bone broth, and sea salt into the slow cooker. Cover and cook on low for 6 hours until the meat is falling apart.

Slowly ladle 50ml of the hot chicken cooking liquid from the slow cooker into the egg yolks while whisking vigorously to temper them without scrambling. Slowly whisk in the melted butter until a thick, creamy sauce forms.
