The ultimate hidden-gem comfort dish. Tough beef cheeks are slowly transformed into melt-in-your-mouth pillows of beefy goodness, finished with a deeply savory glaze enriched with rich bone marrow.
Ingredients
2 servings
Beef Cheeks
Beef cheeks500 g
Beef tallow30 g
Sea salt1 tsp
Black pepper0.5 tsp
Garlic cloves, smashed6 pieces
Fresh rosemary2 sprigs
Glaze
Beef bone broth250 ml
Dry red wine50 ml
Beef bone marrow, scooped from bone60 g
Butter30 g
Method
Beef Cheeks
1
Pat the beef cheeks completely dry and season them generously on all sides with sea salt and black pepper. Heat the beef tallow in a heavy Dutch oven over medium-high heat. Sear the cheeks until a dark, rich crust forms on all sides, about 3 to 4 minutes per side. Toss in the smashed garlic cloves and rosemary sprigs.
Glaze
2
Pour the red wine into the pot to deglaze, scraping up all the browned bits from the bottom. Pour in the beef bone broth, cover tightly, and turn the heat down to low. Simmer gently for 3 hours, or until the cheeks are completely fork-tender. Once tender, remove the beef cheeks and keep them warm. Strain the remaining braising liquid and return it to the pot. Add the raw bone marrow and butter, whisking vigorously over medium-high heat until the sauce reduces into a thick, glossy, emulsified glaze.
Plate
3
Place the tender beef cheeks in a shallow bowl, shred them slightly with a fork to allow the sauce to penetrate, and pour the rich bone marrow glaze generously over the meat.
