Method

Ginger-Scallion Salmon

Pat the salmon skin dry and season both sides with sea salt. Heat 1 tablespoon of ghee in a cast-iron skillet over medium-high heat. Place salmon skin-side down, pressing gently for 30 seconds. Cook for 4-5 minutes until the skin is shatteringly crisp, then flip and cook for 1-2 more minutes. Remove and set aside.
Egg-Yolk Cauliflower Rice

In the same skillet, melt the butter over medium heat. Add the cauliflower rice and saute for 3 minutes until tender but not mushy. Turn off the heat, immediately stir in the raw egg yolks and a splash of tamari, tossing vigorously so the residual heat cooks the yolk into a rich, velvety sauce coating the grains.

In a small saucepan, heat 3 tablespoons of tallow or avocado oil with the sesame oil until shimmering hot.
