  1. Score the duck breast skin in a crosshatch pattern, being careful not to cut into the meat. Pat dry thoroughly with paper towels.
  2. Season both sides generously with sea salt and black pepper.
  3. Place the duck breast skin-side down in a cold, oven-safe skillet (cast iron works best).
  4. Turn the heat to medium-low and slowly render the fat from the skin for 8-12 minutes, until crispy and golden brown. Pour off excess fat periodically.
