- Duck Breast (skin-on)150 g
- Sea Salt1/4 tsp
- Black Pepper1/8 tsp
Method
- Score the duck breast skin in a crosshatch pattern, being careful not to cut into the meat. Pat dry thoroughly with paper towels.
- Season both sides generously with sea salt and black pepper.
- Place the duck breast skin-side down in a cold, oven-safe skillet (cast iron works best).
- Turn the heat to medium-low and slowly render the fat from the skin for 8-12 minutes, until crispy and golden brown. Pour off excess fat periodically.
