  1. Season the duck leg quarter (or breast) generously with sea salt and black pepper.
  2. Slow cook the duck: This can be done by roasting in a low oven (300°F/150°C) for 2-3 hours until fork-tender, or in a slow cooker on low for 4-6 hours. Reserve any rendered duck fat.
  3. Once cooked and cooled slightly, remove the skin and bones (if using leg quarter). Shred the duck meat using two forks.
  4. In a skillet over medium heat, melt the duck fat (or tallow).
  5. Form small patties from the shredded duck meat (about 2-3 inches in diameter).
  6. Pan-fry the patties for 2-3 minutes per side, or until golden brown and heated through.
  7. Serve warm.
