Ingredients
- Duck Leg Quarter (or breast)150 g
- Duck Fat (or tallow)1 tbsp
- Sea Salt1/4 tsp
- Black Pepper1/8 tsp
Method
- Season the duck leg quarter (or breast) generously with sea salt and black pepper.
- Slow cook the duck: This can be done by roasting in a low oven (300°F/150°C) for 2-3 hours until fork-tender, or in a slow cooker on low for 4-6 hours. Reserve any rendered duck fat.
- Once cooked and cooled slightly, remove the skin and bones (if using leg quarter). Shred the duck meat using two forks.
- In a skillet over medium heat, melt the duck fat (or tallow).
- Form small patties from the shredded duck meat (about 2-3 inches in diameter).
- Pan-fry the patties for 2-3 minutes per side, or until golden brown and heated through.
- Serve warm.
