Method

Finely chop the fresh parsley. Mince the garlic cloves. Using a fine grater, zest the lemon. Combine the chopped parsley, minced garlic, and lemon zest in a small bowl. Set aside.

Sear the Lamb Chops: Heat 2 tablespoons of lard or tallow in a heavy-bottomed skillet or cast-iron pan over medium-high heat until shimmering. Sear the lamb chops in batches to avoid overcrowding, for 3-5 minutes per side, until a deep, golden-brown crust forms. The internal temperature for medium-rare should be 54-57°C (130-135°F). Adjust cooking time for desired doneness.

Rest the Lamb Chops: Once seared, transfer the chops to a cutting board and let them rest for at least 5 minutes. This allows the juices to redistribute.
