An unpretentious, incredibly decadent Hole-in-the-Wall favorite. Thick-cut eggplant slices are roasted deep in rendered pork lard and topped with a savory, melted garlic and bone marrow paste for a warm, savory side that eats like a meal.

Ingredients

2 servings
Roasted Eggplant
Italian Eggplant, sliced into 1-inch thick rounds1 medium
Pork Lard4 tbsp
Coarse Sea Salt1 tsp
Garlic Marrow Paste
Beef Bone Marrow, scooped from bone80 g
Garlic Cloves, finely minced4 cloves
Fresh Rosemary, finely chopped1 tsp
Black Pepper0.5 tsp

Method

Roasted Eggplant
1
Preheat oven to 425F. Generously salt both sides of the eggplant rounds and let them sit for 15 minutes to draw out excess moisture. Pat them completely dry with a paper towel. Melt the pork lard in a baking pan, toss the eggplant rounds in the hot lard until thoroughly saturated, and space them out in a single layer on the pan.
2
Roast in the oven for 20 minutes, flipping halfway through, until the eggplant is tender, golden-brown, and creamy on the inside.
Garlic Marrow Paste
3
While the eggplant is roasting, combine the raw bone marrow, minced garlic, chopped rosemary, and black pepper in a small bowl, mashing them together with a fork into a thick paste.
Plate
4
Remove the baking pan from the oven. Carefully smear a generous spoonful of the Garlic Marrow Paste over each roasted eggplant round. Return the pan to the oven for 8 minutes, or until the marrow is bubbling, golden, and fully integrated into the tender eggplant. Serve immediately straight from the baking sheet.
5
Transfer the warm, marrow-slathered eggplant to a warm rustic platter and garnish with an extra pinch of coarse salt.
