  1. Pat the wild boar chops thoroughly dry with paper towels. Season generously on both sides with sea salt and freshly ground black pepper.
  2. Heat a heavy-bottomed skillet (preferably cast iron) over medium-high heat until hot. Add the ghee.
  3. Once the ghee is shimmering, carefully place the wild boar chops in the skillet. Add the fresh sage leaves and thyme sprigs to the ghee around the chops.
  4. Sear the chops for 3-4 minutes per side until a deep golden-brown crust forms. While searing, use a spoon to baste the chops continuously with the herb-infused ghee.
  5. Reduce heat to medium and continue cooking, flipping every 1-2 minutes and basting, until the internal temperature reaches your desired doneness (e.g., 60-63°C / 140-145°F for medium-rare).
  6. Remove chops from skillet and let them rest on a cutting board for 5-7 minutes before serving to allow the juices to redistribute.
