- Wild Boar Chops350 g
- Ghee2 tbsp
- Fresh Sage Leaves5 leaves
- Fresh Thyme Sprigs2 sprigs

Method
- Pat the wild boar chops thoroughly dry with paper towels. Season generously on both sides with sea salt and freshly ground black pepper.
- Heat a heavy-bottomed skillet (preferably cast iron) over medium-high heat until hot. Add the ghee.
- Once the ghee is shimmering, carefully place the wild boar chops in the skillet. Add the fresh sage leaves and thyme sprigs to the ghee around the chops.
- Sear the chops for 3-4 minutes per side until a deep golden-brown crust forms. While searing, use a spoon to baste the chops continuously with the herb-infused ghee.
- Reduce heat to medium and continue cooking, flipping every 1-2 minutes and basting, until the internal temperature reaches your desired doneness (e.g., 60-63°C / 140-145°F for medium-rare).
- Remove chops from skillet and let them rest on a cutting board for 5-7 minutes before serving to allow the juices to redistribute.
