- Tallow or Butter30 g
- Sea salt1 tsp
- Black pepper0.5 tsp
- Dried thyme0.25 tsp
Method
- Pat the pork shoulder steaks dry with paper towels. Season generously on both sides with sea salt, black pepper, and dried thyme.
- Heat a heavy-bottomed skillet (cast iron works well) over medium-high heat. Add the tallow or butter.
