Method

Place chicken thighs skin-side down in the hot skillet, ensuring not to overcrowd the pan (cook in batches if necessary). Reduce heat to medium-low and cook for 12-15 minutes, pressing down occasionally with a spatula to ensure full contact with the pan, until the skin is deeply golden, crispy, and most of the fat has rendered out.
