Ingredients

2 servings
Thick-cut bacon8 slices
Eggs4 large
Salt0.5 tsp
Black pepper0.25 tsp
Fresh chives1 tbsp

Method

Preheat the oven to 400 degrees F and line a large baking sheet with parchment paper.

Lay the bacon slices in a single layer on the baking sheet.

Bake the bacon in the oven for 12 minutes until it starts to crisp and has rendered its fat.

Remove the baking sheet from the oven and carefully slide the bacon to create space. Crack the eggs directly onto the hot baking sheet into the rendered bacon fat.

Return the baking sheet to the oven and bake for another 5 to 6 minutes until the egg whites are set but the yolks are still soft.

Season the eggs with salt and black pepper, sprinkle with chopped fresh chives, and serve immediately.
