Street-style shredded pork shoulder infused with smoky adobo spices, loaded onto crispy salted pork rinds instead of corn tortillas. Fast, portable, and packs a massive flavor punch.

Ingredients

2 servings
Adobo Pork
Pork Shoulder450 g
Lard2 tbsp
Chili Powder1.5 tbsp
Ground Cumin1 tsp
Dried Oregano1 tsp
Garlic Powder1 tsp
Apple Cider Vinegar1 tbsp
Beef Bone Broth100 ml
Salt1.5 tsp
Base and Garnish
Pork Rinds60 g
Fresh Cilantro10 g

Method

Adobo Pork
1
Cut the pork shoulder into thin, small strips. Season thoroughly with chili powder, cumin, oregano, garlic powder, and salt. Heat the lard in a heavy skillet over high heat. Sear the seasoned pork until browned and crispy on the edges.
2
Pour in the apple cider vinegar and beef bone broth. Turn the heat down to medium-low, cover, and let simmer for 15 minutes until the pork is extremely tender. Uncover and cook for 3 minutes to reduce any excess liquid to a thick glaze that coats the meat.
Plate
3
Spread the pork rinds across a tray or basket. Mound the hot, juicy adobo pork directly over the pork rinds and scatter fresh chopped cilantro over the top for a bright, fresh finish. Serve immediately while hot and crispy.
