Method

Heat the beef tallow in a pressure cooker or deep pot over medium-high heat. Season the beef cubes with sea salt, ancho chili powder, cumin, oregano, and garlic powder. Sear the beef until well browned on all sides.

Pour in the beef broth and apple cider vinegar. Seal the cooker and cook on high pressure for 45 minutes, or simmer covered on a stovetop for 2 hours until the beef is shred-tender. Shred the meat with two forks and keep it warm in its juices.
Cheese Shells

Heat a non-stick skillet over medium heat. Place two equal piles of shredded Monterey Jack cheese (about 60g each) into the pan, flattening them into circles. Let them melt and bubble until the edges start to turn golden brown and crisp.

Carefully lift each cheese circle with a spatula and drape it over a thick utensil handle or rolling pin to cool and form a taco shell shape.
