Method
Macadamia Crust

In a small bowl, combine the finely crushed macadamias, lime zest, ginger juice, and a pinch of salt. Whisk the egg white until frothy, then gently fold it into the macadamia mixture to form a sticky, cohesive paste.
Ginger-Lemongrass Reduction

In a small saucepan, combine the fish bone broth, sliced ginger, and bruised lemongrass. Bring to a rapid simmer over medium-high heat and reduce the liquid by two-thirds until it forms a highly concentrated, aromatic syrup. Whisk in the ghee to emulsify, season with salt, and strain through a fine-mesh sieve. Keep warm.
Halibut
