Method
Chuck Roast

Pat the beef chuck roast very dry with paper towels. Season generously all over with sea salt and black pepper.

Sear the Roast: In a heavy-bottomed Dutch oven or oven-safe pot, melt the beef tallow or ghee over medium-high heat until shimmering. Sear the chuck roast on all sides until deeply browned, about 3-4 minutes per side. Remove the roast from the pot and set aside.

Reduce heat to medium. Add the smashed garlic cloves, thyme sprigs, rosemary sprigs, and bay leaves to the pot. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
