Method

Place the prosciutto slices between two sheets of parchment paper on a baking sheet. Weigh down with a second baking sheet and bake at 180C (350F) for 10-12 minutes until completely crispy. Allow to cool, then break into delicate shards.
Poached Lobster

In a small, narrow saucepan, melt the ghee and bring it to a gentle, steady temperature of 60C (140F). Submerge the lobster tails entirely in the warm ghee. Poach gently for 6-8 minutes until the lobster flesh is opaque and tender. Remove and drain slightly, then season with sea salt.
Tarragon Emulsion

In a small heatproof bowl over a pot of gently simmering water (double boiler), whisk the egg yolks with tarragon vinegar, water, and sea salt. Whisk vigorously until the mixture is thick, pale, and holds ribbons. Slowly drizzle in 2 tablespoons of the warm poaching ghee from the lobster pan, whisking constantly to emulsify. Fold in the fresh chopped tarragon.

Spoon a pool of the warm Tarragon Emulsion onto the center of each plate. Slice the poached lobster tail into medallions and arrange over the emulsion. Garnish the plate with the crispy Prosciutto Shards for texture.
