Egg, beaten1 piece
Lard4 tbsp

Beef bone broth120 ml
Tamari soy sauce1 tbsp
Apple cider vinegar1 tsp
Cold butter20 g

Method

Cutlet

Season the pounded pork chops on both sides with sea salt and black pepper.

Mix the crushed pork rinds and grated parmesan cheese together in a shallow dish. Place the beaten egg in another shallow dish.

Dip each chop first into the egg, coating thoroughly, then dredge in the pork rind mixture, pressing firmly so it forms a thick, even crust.

Melt the lard in a heavy cast-iron skillet over medium-high heat. Once hot and shimmering, fry the pork cutlets for 3 to 4 minutes per side until deeply golden and crispy. Remove from the skillet and let rest on a wire rack.

Pour off excess frying fat from the skillet, leaving about 1 tablespoon. Return the skillet to medium heat and pour in the beef bone broth, tamari, and apple cider vinegar to deglaze, scraping up the browned bits from the bottom.

Simmer the liquid until reduced by half, then remove the pan from the heat. Whisk in the cold butter, one piece at a time, to create a glossy, thickened gravy.
