Method

Smash Patties

Divide the ground beef into four equal balls. Heat a cast-iron skillet over high heat. Render the bacon slices until crispy, then remove and set aside, leaving the bacon fat in the pan. Place the beef balls in the hot skillet and press them completely flat using a heavy spatula. Season generously with salt. Sear for 2 minutes until a deep crust forms, flip, immediately top each patty with a slice of American cheese, and cook for 1 more minute until melted.

In a small bowl, whisk together the mayonnaise, yellow mustard, Worcestershire sauce, and finely chopped kosher dill gherkins until smooth.

Split the keto buns and toast them in the remaining skillet fat with a bit of butter. Spread the special sauce generously on the bottom and top buns. Lay down two cheesy patties per bun, top with two slices of crispy bacon, sliced jalapeños, and thin red onion rings. Close the slider and serve hot.
