Ingredients
- Pork Belly (skin-on, boneless)300 g
- Sea salt1 tsp
- Lard (optional, for cooking)15 g
Method
- Pat the pork belly thoroughly dry with paper towels. Score the skin in a cross-hatch pattern with a sharp knife, being careful not to cut too deep into the meat.
- Season the pork belly generously on all sides with sea salt, ensuring salt is rubbed well into the scored skin.
- Heat a heavy-bottomed pan (like cast iron) over medium-high heat. Add the lard if using. Place the pork belly skin-side down in the hot pan.
- Sear for 15-20 minutes, pressing down occasionally to ensure even contact, until the skin is deeply golden brown and very crispy. A significant amount of fat will render.
- Flip the pork belly and continue cooking meat-side down for another 10-15 minutes, or until cooked through and tender. If too much fat accumulates, carefully drain some off.
- Remove the pork belly from the pan and let it rest on a cutting board for 5 minutes.
- Cut the crispy pork belly into bite-sized cubes. Serve immediately as a satisfying, hand-held snack or meal.
