Salmon fillet, skin-on200 g
Large eggs3 pieces
Butter15 g
Coarse sea salt0.5 tsp
Method

Pat the salmon skin dry with a paper towel and season all sides with sea salt.

Place the butter in a cold non-stick skillet and turn the heat to medium.

Once the butter melt, place the salmon skin-side down in the pan and cook for 5 to 6 minutes until the skin is very crispy.

Flip the salmon and cook the other side for another 2 to 3 minutes, then push the salmon to one side of the skillet.

Crack the eggs directly into the empty side of the skillet and cook them in the salmon fat and butter to your desired doneness.

Slide the salmon and eggs onto a plate and serve immediately.
