Boneless Pork Shoulder (Boston Butt)1.2 kg
Lard (pork fat)200 g
Water350 ml
Sea Salt2 tsp
Bay Leaves2

Method

Cut the pork shoulder into 5-7 cm (2-3 inch) cubes. Place the pork cubes in a heavy-bottomed pot or Dutch oven. Add the lard, water, sea salt, and bay leaves to the pot.

Simmer and Render: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low, cover partially (leaving a small gap for steam to escape), and simmer gently for 1.5 to 2 hours, or until most of the water has evaporated. The pork will be tender and cooking in its rendered fat.

Crisp the Carnitas: Once the water has evaporated, increase the heat to medium. Continue to cook, stirring occasionally, allowing the pork to brown and crisp in the rendered lard. This step can take another 30-45 minutes. The pork should be deeply golden brown and crispy on the outside, while remaining incredibly tender inside.

Rest and Serve: Carefully remove the crispy pork carnitas from the pot with a slotted spoon and transfer to a serving platter. Discard the bay leaves. You can shred some pieces or serve them as chunks. Serve immediately.
