Method

Place the diced pork belly, water, lard, and salt into a cold skillet. Bring to a simmer over medium-high heat. Allow the water to boil off completely, which cooks the pork through. Once the water is gone, the pork will begin to fry in its own rendered fat. Cook for 10 to 12 minutes, stirring occasionally, until the pork pieces are deeply browned and crispy.
