Pork belly (skin on or off)1000 g

Method

Pat the pork belly dry with paper towels. Cut the pork belly into 1-inch cubes. If the skin is on, score it lightly with a sharp knife, taking care not to cut through the meat.

In a small bowl, combine the sea salt, black pepper, garlic powder, smoked paprika, and cayenne pepper. Mix well.

Toss the pork belly cubes with the spice rub, ensuring all sides are evenly coated.

Pan-fry and Plate: Heat a large, heavy-bottomed skillet or cast-iron pan over medium heat. Add the pork belly cubes, starting with a cold pan if the pork belly has a lot of fat to render. Cook, turning occasionally, for 20-30 minutes, or until deeply golden brown and crispy on all sides. The fat will render out, effectively frying the pork belly in its own fat.

Once cooked, carefully remove the pork belly from the pan and let them rest on a paper towel-lined plate to drain any excess fat. Thread 3-4 pieces onto small skewers for easy handling. Serve hot.
