Preheat Oven: Preheat your oven to 200°C (400°F).

Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat too deeply. Cut the pork belly into 2-3 cm (1-inch) cubes.

Apply the Spice Rub: In a bowl, combine sea salt, black pepper, smoked paprika, garlic powder, and onion powder. Toss the pork belly cubes with the spice rub until evenly coated.

Roast the Pork Belly: Arrange the seasoned pork belly cubes in a single layer, skin side up, on a baking sheet. Roast for 30 minutes, then reduce the oven temperature to 160°C (325°F) and continue roasting for another 60-90 minutes, or until the pork belly is very tender and the fat has rendered significantly.

Crisp and Glaze: Remove the pork belly from the oven. Discard excess rendered fat. In a large pan (cast iron works great) over medium-high heat, add the pork belly cubes. Drizzle with apple cider vinegar. Cook, stirring occasionally, until the cubes are crispy on all sides and the vinegar has reduced to a light glaze. Serve hot as a handheld snack or meal.
