Ingredients

Skinless pork belly1 kg
Sea salt2 tsp
Black pepper1 tsp
Garlic powder1 tsp
Smoked paprika1.5 tsp
Cayenne pepper0.5 tsp
Beef tallow2 tbsp

Method

Preheat your oven to 150°C (300°F).

Cut the pork belly into 2-inch cubes. Pat them very dry with paper towels.

In a bowl, combine the sea salt, black pepper, garlic powder, smoked paprika, and cayenne pepper. Toss the pork belly cubes with the spice mixture until evenly coated.

Arrange the seasoned pork belly cubes in a single layer on a baking sheet, ideally with a wire rack underneath to allow fat to drip.

Roast in the preheated oven for 2.5 to 3 hours, or until the pork belly is very tender and much of the fat has rendered.

Remove the pork belly from the oven and let it cool slightly. Discard any rendered fat if desired, or save for other cooking.

Heat the beef tallow in a large cast-iron skillet or heavy-bottomed pan over medium-high heat.

Once the tallow is hot, add the pork belly cubes in a single layer, ensuring not to overcrowd the pan. You may need to work in batches.

Sear the pork belly for 3-5 minutes per side, until deeply golden brown and crispy on all sides.

Remove from the pan and serve hot. These are fantastic on their own for a satisfying, crispy bite.
