- Pork Belly250 g
- Sea Salt1/2 tsp
Method
- Preheat your oven to 190°C (375°F).
- Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat too deeply. Pat dry thoroughly with paper towels.
- Rub the sea salt generously over the skin and meat sides of the pork belly.
- Place the pork belly skin-side up on a wire rack set over a baking sheet.
- Roast for 45-60 minutes, or until the skin is puffed, golden, and crispy. If needed, broil for the last 5-10 minutes, watching carefully to prevent burning.
- Remove from oven, let rest for 5 minutes, then cut into bite-sized pieces and serve warm.
