  1. Preheat your oven to 190°C (375°F).
  2. Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat too deeply. Pat dry thoroughly with paper towels.
  3. Rub the sea salt generously over the skin and meat sides of the pork belly.
  4. Place the pork belly skin-side up on a wire rack set over a baking sheet.
  5. Roast for 45-60 minutes, or until the skin is puffed, golden, and crispy. If needed, broil for the last 5-10 minutes, watching carefully to prevent burning.
  6. Remove from oven, let rest for 5 minutes, then cut into bite-sized pieces and serve warm.
