Ingredients

Pork belly, cubed450 g
Eggs4 whole
Sea salt1 tsp
Black pepper0.5 tsp

Method

Place the cubed pork belly into a cold cast iron skillet and turn the heat to medium-low.

Cook the pork belly slowly for 15 to 20 minutes, stirring occasionally, until the fat renders and the cubes become crispy and golden brown.

Remove the skillet from the heat briefly to drain excess liquid fat, leaving about two tablespoons in the pan to cook the eggs.

Return the skillet to medium-low heat, spread the pork belly evenly, and crack the eggs directly into the spaces between the pork belly cubes.

Season everything with the sea salt and black pepper.

Cover the pan with a lid and cook for 3 to 4 minutes until the egg whites are set but the yolks remain soft, then serve directly from the pan.
