Bring a small pot of water to a boil. Gently lower the egg into the water and cook for exactly 6 minutes and 30 seconds, then immediately transfer to an ice bath. Once cool, peel the egg and slice it in half.

Heat avocado oil in a non-stick skillet or cast-iron pan over medium-high heat. Season the pork belly cubes with sea salt. Add them to the hot pan and cook, turning occasionally, for 8 to 10 minutes until the edges are crispy and the fat has beautifully rendered.
