Heat a skillet over medium-high heat. Add the ground beef and press it flat into the pan to get a good sear. Let it cook undisturbed for 4 minutes until a golden crust forms. Break up the meat, stir in the butter and sea salt, and cook for another 3 minutes until fully browned.
Egg Topping

Separate the egg yolks from the whites, keeping the yolks whole in a small cup. Grate the parmesan cheese finely.

Divide the hot crispy beef into two bowls. Create a small well in the center of the beef and gently slide two egg yolks into each well. Sprinkle with grated parmesan cheese and serve immediately so the hot beef warms the yolks.
