Pat chicken thighs very dry with paper towels. Season generously with sea salt and black pepper on both sides, especially on the skin.

Render and Sear: Place chicken thighs, skin-side down, in a cold, heavy-bottomed pan (cast iron works best). Turn heat to medium-low. Slowly render the fat from the skin for 15-20 minutes until the skin is deeply golden brown and very crisp. Increase heat to medium-high and flip the thighs, searing for 5-7 minutes on the flesh side until cooked through (internal temperature 74°C / 165°F). Remove thighs from the pan and set aside on a plate, tented with foil.
Pan Dressing

Pour off most of the rendered chicken fat from the pan, leaving about 2-3 tablespoons. Reduce heat to low. Add minced garlic to the pan and cook for 30 seconds until fragrant. Deglaze with chicken broth, scraping up any browned bits. Stir in the fresh parsley and lemon juice. Simmer for 1-2 minutes until slightly reduced and flavors meld. Season with salt and pepper to taste.
Serve

Plate the crispy chicken thighs and spoon the warm pan dressing generously over them.
