Method
- Gently melt the rendered beef tallow and cultured butter together in a small saucepan over very low heat. Do not let it get hot, just liquid and integrated.
- In a heatproof bowl, whisk together the egg yolks, lemon zest, fresh thyme leaves, grated ginger, erythritol-monk fruit blend, and a tiny pinch of sea salt until light and creamy.
- Slowly, in a thin stream, temper the warm (not hot) melted fat mixture into the egg yolk mixture, whisking continuously and vigorously until fully emulsified and slightly thickened. The emulsion should be smooth and cohesive.
- Strain the mixture through a fine-mesh sieve into a clean bowl to remove the thyme leaves and ginger solids, ensuring an ultra-smooth texture. Gently press the solids to extract all flavour.
- Divide the Crème Verte into small ramekins or elegant dessert glasses. Cover tightly with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
- Refrigerate for at least 4 hours, or preferably overnight, until thoroughly chilled and set into a firm, velvety mousse.
- Before serving, allow to sit at room temperature for 10-15 minutes to slightly soften and release its full aromatic profile. Garnish with a tiny sprig of fresh thyme or a whisper of lemon zest.
