Bone Marrow Glaze
Beef bone marrow100 g
Fresh rosemary2 g
Consommé Reduction
Beef bone broth250 ml
Red wine vinegar15 ml

Method

Cauliflower Silk

Steam cauliflower florets until completely soft. Transfer to a high-speed blender along with heavy cream, butter, and white truffle oil. Blend on high for 3 minutes until completely smooth, glossy, and aerated. Pass through a fine-mesh chinois and keep warm.
Bone Marrow Glaze

Roast the bone marrow in its bones at 200C (400F) for 15 minutes. Scoop out the warm marrow into a small bowl and whip vigorously with minced rosemary and a pinch of salt until smooth.
Consommé Reduction

Combine the beef bone broth and red wine vinegar in a small saucepan. Bring to a boil and reduce until it reaches a thick, syrupy consistency that coats the back of a spoon.
Beef Tenderloin

Season the beef filets generously with flaky sea salt. Sear in a smoking-hot cast-iron skillet with beef tallow for 2 minutes per side to achieve a deep crust. Remove from the pan, immediately spread a spoonful of the whipped Bone Marrow Glaze over the hot steaks, and let rest for 5 minutes.

Draw a smooth, elegant swoop of the Truffled Cauliflower Silk across each plate. Place the rested, glazed beef filet in the center. Spoon the rich Consommé Reduction in a perfect circle around the beef, and finish with a sprinkle of flaky sea salt.
