An unpretentious and deeply satisfying dessert inspired by the famous San Sebastian cheesecake. Baked at high heat for a caramelized exterior and a rich, custardy middle, topped with a salty-savory crunch of bacon.

Ingredients

6 servings
Cheesecake Batter
Cream Cheese450 g
Powdered Erythritol90 g
Whole Eggs3 large
Heavy Cream200 ml
Vanilla Extract1 tsp
Sea Salt0.5 tsp
Salty Pork Topping
Pork Belly Bacon100 g

Method

Cheesecake Batter
1
Heat the oven to 450 degrees F (230 degrees C) and line a muffin tin or small ramekins with parchment paper. In a large bowl, beat the softened cream cheese and powdered erythritol until completely smooth with no lumps. Beat in the eggs one at a time, followed by the heavy cream, vanilla, and salt. Pour the smooth batter into the prepared tin compartments.
2
Bake in the hot oven for 20 to 22 minutes until the tops are deeply browned and almost burnt, but the centers still jiggle slightly. Remove and let cool to room temperature, then chill in the fridge for at least 2 hours to set.
Salty Pork Topping
3
Fine-dice the pork belly bacon. In a skillet over medium heat, fry the bacon until it is completely rendered and exceptionally crispy. Drain the bacon bits on a paper towel, reserving a tiny drizzle of the warm fat.
Plate
4
Remove the set cheesecakes from their molds, place on a platter, top generously with the crispy pork belly bits, and lightly drizzle with the reserved warm pork fat for a sweet-and-savory bite.
