Whisk the eggs, grated parmesan, and sea salt together until completely smooth. Pour the mixture onto a baking sheet lined with parchment paper, tilting to spread it thin and even. Bake at 350F (175C) for 8 to 10 minutes until set. Let cool slightly, then cut into three equal rectangular sheets.

Brown the ground beef in a skillet with butter over medium-high heat. Pour in the beef bone broth and heavy cream. Simmer the mixture on medium-low until the liquid reduces completely and clings thickly to the beef, then season with sea salt.
Assembly and Bake

In a small baking dish, place one egg pasta sheet. Layer with one-third of the beef filling, dollops of ricotta cheese, and shredded mozzarella. Repeat this layering process twice more, ending with a generous blanket of mozzarella on top. Bake in the oven at 400F (200C) for 15 minutes, or until the cheese is bubbling, deeply golden-brown, and slightly charred at the edges.
