Ingredients

2 servings
Ground pork sausage250 g
Eggs4 large
Cheddar cheese40 g
Dried sage0.5 tsp
Salt and black pepper0.5 tsp

Method

Preheat the oven to 375F (190C) and lightly grease four cups of a muffin tin.

In a bowl, mix the ground pork sausage, dried sage, salt, and pepper together.

Divide the pork mixture into four portions and press each portion into the bottom and sides of the muffin cups to form a cup shape.

Bake the pork cups in the oven for 12 minutes until partially cooked.

Remove the tin from the oven, crack one egg into each pork cup, and top with the cheddar cheese.

Return to the oven and bake for another 10 to 12 minutes until the eggs are set to your desired doneness.
