- Rich beef bone broth reduction30 ml

Method
- In a medium bowl, gently whisk the eggs, heavy cream, and bone broth reduction until just combined, being careful not to incorporate too much air. Season with flaky sea salt and white pepper.
- Divide the egg mixture evenly into two small oven-safe ramekins (approx. 4-6 oz capacity).
- Place the ramekins into the air fryer basket. Cook at 140°C (285°F) for 15-20 minutes, or until the custards are just set with a slight wobble in the center. The goal is a delicate, creamy texture, avoiding overcooking which can lead to a rubbery consistency.
- While the custards cook, prepare the brown butter. In a small, light-colored saucepan, melt the cultured butter over medium heat. Add the thinly sliced shallot. Continue cooking, swirling occasionally, until the butter solids turn a deep, nutty golden brown and the shallots are caramelized and fragrant (Maillard reaction in full effect, yielding complex nutty notes). Remove from heat immediately to prevent burning.
- Carefully remove the ramekins from the air fryer. Allow to rest for 2 minutes.
- Drizzle the warm brown butter and caramelized shallots generously over each custard. Garnish with a sprinkle of fresh chives, parsley, and delicate lemon zest for an aromatic finish.
